Summer Fruit Infusion

Alright so last week I started you off with a bit of a challenging challenge, so this week I am giving you something easier. Summer Solstice has just turned the corner which means summer is officially here!

Fruit infusions make a great substitute for fruit juice and fizzy pop. They are a good way to get kids to drink more water and are super easy to make. Most of all they are incredibly refreshing.

Fruit Infusion 1
What did I use? Organic strawberries, lemon balm, and borage flowers from my garden!

MATERIALS
-Approximately 1 cup of your favourite fresh fruit in any combination you like. See my suggestions below.
-Some fresh herbs if you have them. Here are some good ones: borage, mint, catnip, lemon balm, and lavender.
-1 litre mason jar with a lid (or other glass container with a lid)
-Cold water

DIRECTIONS
1.Chop up your fruits to make yummy flavour combination.
2. Place about 1 cup of the fruit in a 1 litre mason jar.
3. Add a couple of springs of fresh herbs if you have them. No need to chop them up. They look nicer whole.
4. Cover the fruits and herbs with cold water. Place the filled jar in the refrigerator.
5. Your cold fruit infusion should be ready in a few hours. You will see the water take on the fruits colour. The longer you infuse the more concentrated it becomes.
6. Strain into a glass and add sweetener of your choice (optional). I like to add some of the strawberries back in the glass to make it look all fancy. Add some ice and enjoy!

TIPS

-The infusion should be drunk within 2-3 days.
-Add some fizzy club soda to the infusion to make it bubbly. This will make the infusion less concentrated, but hey everyone loves a bit of fizz.
-Here are some tried and true combinations:

  • Fresh mint and cucumber
  • Any berry or a combination of berries
  • Watermelon, cucumber, and mint
  • Pineapple and kiwi
  • Watermelon and peach
  • Fresh lavender and lemon
  • Peach and strawberry
